1. PDFs are now extracted to EPUB (HTML) format, to allow adding text styles and images, and also navigation by page numbers, and by table of contents, if such table was present in the PDF. If you don't like this, you may change the PDF text extraction options to extract to plain text format, as was done in older versions. To switch to this format, open any PDF file with the "Open" button on top (folder icon), and then when the PDF Text Extraction Options screen appears, select "Plain text" format on top.
2. Stops - probably you are using a Google Text to speech voice, and it does not have the local speech data downloaded, so it generates the voice over the Internet, and stops when connection goes down or slows. Only Google voices do this. To download the local voice data, connect your phone or tablet to a fast WiFi network, then start listening with that voice for a moment. Google will then start downloading the necessary data. Wait a few minutes on WiFi at least to let them finish. Then the voice will work even without any Internet connection, and without stopping. You may need to repeat this after each update to Google Text-to-speech product, unfortunately. To avoid such troubles, get good voices from Vocalizer TTS package or Acapela TTS, or many others available in Google Play store.
3. You have probably turned off the option to "Start talking at once" - open the Settings menu in @Voice - Speech settings - START tab, then add a check-mark to "Start talking at once" field.
